A quiche is a tart made with pie crust and a creamy, savory custard filling. The simplest version calls for eggs, heavy cream, whole milk, salt, and pepper—but quiche often stars cheese, bacon and other meat, and all kinds of vegetables. Most of our quiche recipes are made in a pie pan, but we also have deep-dish quiches (so, more filling than crust!) and large-format rectangular quiches.
We think the crust is particularly important—and we like to mix it up. Pâte brisée is classic, but we love the spectacular look and crunch of puff pastry crusts (made with frozen puff pastry); we have gluten-free options, too. Whatever crust (and fillings) you choose, all of the quiches in this collection are delicious for breakfast, brunch, or dinner.
