Hands up if you grab a rotisserie chicken at the grocery store!

There is one in my cart nearly every time I’m at the store, because it’s such a quick and easy building block to so many other meals. We use them in salads, quesadillas, wraps, and omelets, to name a few, but you can also lean on them as a fabulous shortcut for many meals.

You can use a rotisserie chicken for any recipe that calls for “cooked chicken” and I’ve rounded up my 10 favorite (plus one bonus!) recipes here on BEB that can utilize a store-bought rotisserie chicken for quick and easy (but super hearty!) weeknight dinners.

    After you’ve used the chicken meat, don’t throw out the bones, wings, and skin that remain. This makes the most delicious chicken stock. Add in some onion and celery and simmer for a couple of hours, strain the stock and it’s ready to use in whatever recipe you have.

    Chicken and dumplings. Having the chicken already cooked really cuts down on the cooking time

    I almost never buy rotisserie chicken mostly because I don’t like dark meat. I have on occasion made chicken stock out of the leftover chicken. I either roast bone in, skin on chicken breasts or cook boneless, skinless on the stove and shred the chicken and keep on hand.

    I think theCheesy Chicken, Broccoli and Rice Casserole should be added to the list.

    Love that theChicken Tortilla Soup is based on the soup from Max and Erma’s. The soup and the 3rd St/Village salad was a favorite lunch there — the one closest to me closed a couple of weeks ago . :-( Now if you could come up with the recipe for the sweet and tangy dressing used on the salad!

    Chicken stuffed shells. My family can’t get enough when I make these. They are a bit time consuming, so I make them for get togethers mostly.

    I buy a 3 lb bag of rotisserie chicken breast meat at Costco all the time. Then I break it into three 1lb portions to use in recipes. 2 bags I freeze, and I used in the week. It really is economical and much faster to use than even buying a chicken and having to take the meat off yourself. The only negative is that it’s only breast meat (which isn’t an issue in my house). I have used it successfully in many of your recipes, like Chipotle Chicken Corn Chowder, Tacos (using your seasoning blend), Buffalo Chicken Dip. I also make salads, enchiladas, or just snack on it as a healthy protein.

      Diane, what a fabulous idea! I didn’t know they had these 3 lb bags. Are they fresh or frozen?

      I didn’t know either!! Where in the store is it located?

        It’s usually in a refrigerated case with the rotisserie chickens and their fresh prepared foods…..it’s in a shrink wrapped package and runs about $12

    I make your Cheesy Chicken, Broccoli and Rice Casserole with rotisserie chicken. I’ve paired down the prep so that it only takes about 5 minutes. I’ve used chicken breasts in the past, but I have found that rotisserie chicken tastes so much better.

    Also, remember to save the bones and skin – they make the most flavorful broth!!
